Like a toque-wearing Moses, Andre Rochat parted the waves of Las Vegas budget buffets in 1980, bringing the cuisine of his local France to a culinary desert. Rochat has ever since included Andre's at the Monte Carlo and Alizé at the Palms. However his provincially decorated flagship in a 1930s-era downtown house-with four comfortable dinner rooms, each representing some other French city and decorated by using lots of wood, tapestries, and very soft lighting-is even now moving strong, owing simply to a menu that features both equally classic French meals like coquilles Saint Jacques (scallops in a wine-enriched cream sauce) and lots of with updated twists, like grilled quail with figs and prosciutto. Entrée prices start in the mid-30s.
